Frog Legs
12 frog legs
Lemon Juice
One cup of flour
One cup of bread crumbs
One egg
Salt and Pepper
One stick of butter
Wash frog legs thoroughly. Place legs in pan.
Marinate in lemon juice covered with crushed ice.
Refrigerate for three or four hours. Rinse.
Roll in salt and peppered flour.
Dip in beaten egg and roll in bread crumbs.
Fry in butter until golden brown. Serve at once.
Southern Cornbread
2 cups of white cornmeal
1 cup of buttermilk
1 egg
1/4 cup oil, melted shortening or lard
Pre-heat oven to 400 degrees
Grease a 10 inch iron skillet with shortening
In a large bowl, mix all ingredients thoroughly and pour into your iron skillet.
Cook for approx 30 minutes or until it`s golden brown. Mmmmm good! that`s some mighty fine eating.
Granny's Biscuits
3 cups self-rising flour
1 cup of buttermilk
1/2 cup shortening
Place flour in a large bowl.
Cut in the shortening.
Add the buttermilk. Mix well.
Roll it out on a floured surface.
Cut out biscuits with a small glass.
Bake in pre-heated 425 degree oven about 15 minutes.
Makes about 3 dozen biscuits.
Hush Puppies
3/4 cup self rising yellow corn meal
1/3 cup flour
1/2 teaspoon salt
1/2 cup of butter milk
1 large egg
1/2 cup chopped onion
Combine all of the ingredients in a bowl.
Mix thoughly.
Spoon into hot oil, fry till golden brown.
Beer Bread
3 cups self rising flour
1/3 cup sugar
1 can of beer
Mix above ingredients together and place in a greased loaf pan. Bake for 1 hour at 375° F. Cool on wire rack for 30 minutes before slicing.
Sweet Potato Pie
1 1/2 lb sweet potatoes
1 cup granulated sugar
12 tbsp unsalted butter or margarine
2 eggs
1 tsp vanilla
1/2 tsp nutmeg
A 9 inch frozen deep-dish pie crust
Boil potatoes until tender. Drain and peel.
Put the potatoes, sugar and butter in a blender.
Mix, then add eggs, vanilla and nutmeg.
Blend ingredients until mixture is smooth.
Pour into unbaked pie shell and bake at 375 for 45-55 minutes until filling is set.
Possum Pot Pie
3 shots of Jack Daniels
1 boiled possum (diced)
(city folk use chicken)
1 frozen deep dish pie crust
1/2cup of sliced carrots
1/2 cup diced onions
2 large potatoes (diced)
1 clove of garlic (crushed)
1/2 cup frozen peas
2 eggs (whipped)
Salt and pepper to taste.
Pre-heat oven to 350
Mix all ingredients in a large bowl (except eggs)
Pour the mixture into the pie shell.
Pour whipped eggs on top.
Bake for 45 minutes or until browned.
Take out of oven and let it set for 5 minutes.
Slice and Enjoy!!! :-)
Gator and Craw Fish Casserole
1 lb. Alligator -- crumbled and browned
1 lb. Craw Fish tails
1 lb. Smoked sausage -- sliced
2 cups of converted long grain rice
1 10 oz can of tomatoes/w chiles
1 can onion soup
1 can beef consomme
1 bundle of green onions -- chopped
1 lb Mushrooms -- sliced
3 garlic cloves -- minced
2 bay leaves
1 tb creole seasoning
1 tb black pepper
1/4 lb Butter (melted)
Mix all the ingredients together.
Place in a covered casserole.
Cook in preheated 350 oven for 1 hour.
After 30 minutes, stir well.
Continue cooking for the 30 minutes.
Let cool uncovered for a few minutes and serve.
